The time: For black tea (BOPF or Earl Grey), steep for 8 to 12 hours. Overnight is ideal. For green tea, 6 to 8 hours is sufficient — the lower tannin content means it will not over-extract even at the longer end.

Strain and serve: Remove the leaves or bags, pour over ice, and drink immediately or store in the refrigerator for up to 48 hours. The flavour actually continues to develop slightly over the first day.
