How to judge a masala chai (before you taste it)
Three things separate a serious masala chai from a "chai flavoured" drink, and all three are printed on the pack:
- The base tea. Masala chai lives or dies by its black tea. A named origin and grade (for example, Ceylon BOPF — the same fast-brewing grade behind Malaysia's teh tarik) means the tea was chosen on purpose. "Black tea" with no origin usually means commodity dust.
- Whole spices vs powders and extracts. Whole cinnamon, cardamom and cloves release their character slowly as the chai simmers. Powders extract fast and fade fast; "flavourings" are chemistry, not spice. You can see the difference through the pack.
- The spice count and balance. Café syrups mimic two or three top notes. A traditional Ayurvedic masala balances many — warming against cooling, sweet against pungent — so no single spice dominates. Two honest observations from that table. First, several good Malaysian options are spice-only blends — excellent if you want to source your own tea, but the cup then depends entirely on the tea you add. What is masala chai, exactly?
Black tea simmered with milk and a blend of whole spices ("masala" simply means spice mix). It differs from teh tarik, which is strong plain tea pulled with condensed milk — we compared the two in detail here.
What's the difference between masala chai and a café "chai latte"?
Most café chai lattes are made from a sweetened syrup or instant powder — fast, consistent, and usually listing sugar as the first ingredient. Traditional masala chai is simmered from actual tea and whole spices, so the spice character deepens as it cooks and the sweetness is entirely yours to decide. If the menu says "chai syrup", you're drinking the imitation.
How do you brew masala chai properly?
Simmer the blend in half water, half milk for 4–5 minutes rather than just steeping — whole spices need heat and time. Sweeten to taste.
Does masala chai contain sugar?
A real blend (tea + spices) contains none — you control sweetness. Instant "chai latte" powders typically list sugar first. Check the label.
