Why these three

They cover the three things people actually want from a black tea: a smooth morning cup, something citrus and lighter for the afternoon, and a strong one that stands up to condensed milk. All three come from single Ceylon estates rather than blended leaf from several countries, which is why they taste the same tin after tin.

On the Earl Grey specifically — open it and the difference is immediate. Real bergamot smells like fruit peel: rounded, slightly bitter, floral. Synthetic smells like perfume and leaves a soapy aftertaste.

How to brew each one

English Breakfast: 1 heaped teaspoon, full boil, 3–4 minutes. Milk after steeping, never before.
Earl Grey: 1 heaped teaspoon, full boil, 3 minutes and no longer — over-steeping is what turns Earl Grey bitter and soapy, and it is the mistake almost everyone makes.
BOPF for teh tarik: 2 teaspoons in 150ml water, boil hard 3 minutes, strain, condensed milk to taste, then pull between two jugs until it foams.
